“As soon as the summer is over I’ll….”
I found myself saying these words over and over as the warm busy summer months breezed by me. As soon as wedding season ends, as soon as I am fully moved in, as soon as _______ fill in the blank. I had so much I put off and postponed until things “slowed down”. Well, it’s October and I still have boxes sitting unpacked in my house!
I’ve been realizing lately that if I don’t slow down and take the time to pause, then something in my life will eat up that precious moment. Time is only speeding up as it passes and if I keep saying, “As soon as I have time” then it doesn’t happen. So…I’ve made a commitment to simplify my life from the things that eat up time. The extra stuff, the extra jobs, the things that waste time, and even the debt I’m carrying around (don’t worry…more on that to come). So now instead of rushing through my life I’m taking time to figure out what’s most important to me and giving my time to that.
Now, part of this new enjoyment has been learning to make things from scratch and savoring the process. So of course I started with a new twist on my favorite: Hollandaise. I love this creamy delicious sauce but have always used a short cut method. Did you know when you take the time to whisk by hand it adds a whole new dimension of flavor? Now pair that rich creaminess with the sharp bite of arugula and you get the perfection that is below. I’ve also been adding this healthy mustard-y taste to salads, grilled pizzas, burgers, and pasta. It’s like spinach with a kick.
